tarts and salad

it’s been a while….

i was busy with papers and midterms and reading week and catching up on sleep lost during reading week. but alas, i am back : )

one of my favourite food groups is savoury tarts. they’ve always been huge in my family. when i lived at home my mom would make leek tart, zucchini tart, ham and cheese tart, spinach tart, quiches…. it was a good thing i liked them so much, because we ate them quite often

but now, i’m all on my own, and my mother no longer cooks for me. and the other day i got a craving for a tart… so i made a red onion and goat cheese tart

and paired it with a simple tomato, lettuce, and onion salad with olive oil as dressing. my favourite

red onion and goat cheese tart (borrowed from a little bit of everything)

[ingredients]
pastry crust
2 medium red onions
2 tablespoons butter
14 oz can of diced tomatoes
goat cheese
fresh chives
salt and pepper

[directions]
slice red onions. in a frying pan, melt the butter and add sliced onions, tomatoes, salt, pepper, and some chives. cook until softened.

in a well-buttered ceramic or glass dish (approximately 9×9), place the dough, fill the tart with onion and tomato mixture. generously crumble goat cheese and chives on top. bake at 350ºF for 25 minutes. cool for 15 minutes.

    YUUUUM! I’ve been thinking about onion tarts a lot lately. Last summer Rosa’s dad made us a caramelized onion white pizza with goat cheese in the outdoor brick oven he built and it was a-m-a-z-i-n-g!! I’ve been thinking about onion pizza and onion tarts and yumminess since.
